Palm Grove Anguilla Lobster Johnny Cake

Serving size: 1-1/2 dozen

Ingredients

  • 4 Cups Flour
  • ¼ Cup Cornmeal
  • 2 Tablespoons Baking Powder
  • 1 Tablespoon Salt
  • ¼ Cup Sugar
  • ¼ Cup Vegetable Oil
  • 1 ½ Cups Water

Directions

  1. Sift together flour, cornmeal and baking powder. Mix together with salt and sugar.
  2. Make a well in the flour mixture and add vegetable oil then slowly add water.
  3. Mix carefully until mixture is not sticky.
  4. Knead into a ball until smooth.
  5. Cover and let sit for 15 minutes.
  6. Roll dough into a long strip and cut into small pieces.
  7. Knead each piece into a small ball.
  8. On a floured surface, flatten each ball with a rolling pin or your finger tips and palms.
  9. Add about 1/3 frying oil into a frying pan or enough oil to cover the bottom of the pan.
  10. When oil is hot, add flattened cakes.
  11. Fry on one side for 2-3 minutes, turn and continue with other side until both sides are golden brown
